The story of our nougat has “sweet” roots.
Until the 1990s we worked in the confectionery industry, specializing in creams and gelato. An encounter with nougat in the beginning of the 2000s awoke our interest in the pastry and bakery sector, leading us to learn more about its history and traditions.
This is how we began our geographical and cultural journey in the search of the origins of nougat. We delved into its thousand-year history and its infinite number of recipes. We traveled all over Italy and Europe in the search for its master pastry chefs, and we snatched their secrets to experiment with them in our own pastry lab at San Damiano d’Asti.
